A Madison County couple is bringing another location of a breakfast-brunch-lunch concept restaurant to Huntsville this spring.
Eggs Up Grill will open at 1307 Four Mile Post Rd., at the Blue at Valley Bend, to join the other location in Madison on Hughes Road. An opening date has not yet been announced.
Raymond and Kamara Fields are the franchisees.
The 3,066-square-foot restaurant will have indoor seating for 130 and outdoor seating for 40. It will be open seven days a week, from 6 a.m. to 2 p.m., with dine-in, online ordering, takeout, catering and delivery options available.
The restaurant is accepting applications at the website.
Eggs Up Grill offers favorites, such as corned beef hash with potatoes, onions and special spices; made-to-order omelets; buttery, grilled blueberry muffins, and lunch selections including burgers, melts, salads and more.
The franchise has locations across the Carolinas, Georgia, Florida, Virginia, Tennessee, Texas and Mississippi.
“We are very excited to bring Eggs Up Grill to Huntsville, because you are going to have a memorable experience every time you walk in the door – from calling you by your name to serving classic dishes that taste like something you would cook at home, at a great value,” Kamara Fields said.
Raymond Fields, a retired U.S. Army Sergeant Major of 28 years, worked at Redstone Arsenal before retiring from the service in 2005. Kamara has spent the last 20 years in finance, from business development to serving as a wealth advisor. The couple relocated to Huntsville 15 years ago.
